Hot Mulled Cider — serves 10-12

  • 2 quarts fresh apple cider
  • 1 lemon cut in thin slices
  • 2 teaspoons whole cloves
  • 2-3” cinnamon sticks
  • 1/2 cup firmly packed brown sugar
    (optional to taste)

Combine the cider, lemon and cinnamon and cloves in a saucepan.
Bruise the lemon slices with the back of a wooden spoon. Bring to boil, reduce heat and simmer for 10 minutes. Remove lemon and cinnamon sticks. Add sugar to taste.

Serve in mugs garnished with a fresh lemon slice and cinnamon stick.

Apple Nog or Apple Snackle

  • 1 egg
  • 75 ml - cold milk
  • 1 ml - cinnamon
  • 5 ml - honey
  • 175 ml chilled apple juice

Combine all ingredients. Beat or blend until frothy. Pour into tall glass and serve at once. Makes 1 serving.

Cider Julep

  • 500 ml fresh sweet cider
  • 250 ml orange juice
  • Fresh mint leaves
  • 125 ml pineapple juice
  • 30 ml lemon juice

Combine the cider and juices and stir well. Serve over ice and garnish with a mint leaf or two.

Cider Pound Cake

  • 1 cup butter
  • 4 eggs
  • 3 cups all purpose flour
  • 1/4 tsp. salt
  • 1 cup sweet apple cider
  • 1 1/2 cups firmly packed brown sugar
  • 1 tsp. baking soda
  • 3/4 tsp. nutmeg, cinnamon

Cream butter then add sugar. Add eggs one at a time, beating well after each addition. Stir together dry ingredients then add to butter mixture alternately with the cider. Pour batter into greased 9”x5” loaf pan.

Bake at 350° for 1 hour, cool in pan for 10 minutes.

Apple & Cider Muffins

  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup molasses
  • 1 egg
  • 3/4 cup sweat apple cider
  • 2 apples peeled & choped
  • 1 1/2 cups flour
  • 3/4 cup natural bran
  • 1 tbsp. baking powder
  • 1 tbsp. baking soda
  • 1/2 tsp. nutmeg, cinnamon
  • 1 cup raisins
  • 1/2 cup walnuts

Mix sugar, oil, molasses & egg. Stir in cider & apples.

In large bowl, stir flour, bran, baking powder, baking soda, spices. Blend in apple mix, just until moist, add raisins & nuts.

Spoon into greased & floured tins. Bake at 400° F for 20 minutes.

Yield - 1 1/2 dozen.
