Hot Mulled Cider serves 10-12
- 2 quarts fresh apple cider
- 1 lemon cut in thin slices
- 2 teaspoons whole cloves
- 2-3 cinnamon sticks
- 1/2 cup firmly packed brown sugar
(optional to taste)
Combine the cider, lemon and cinnamon and cloves in a saucepan.
Bruise the lemon slices with the back of a wooden spoon. Bring to boil, reduce heat and simmer for 10 minutes. Remove lemon and cinnamon sticks. Add sugar to taste.
Serve in mugs garnished with a fresh lemon slice and cinnamon stick.
Apple Nog or Apple Snackle
- 1 egg
- 75 ml - cold milk
- 1 ml - cinnamon
- 5 ml - honey
- 175 ml chilled apple juice
Combine all ingredients. Beat or blend until frothy. Pour into tall glass and serve at once. Makes 1 serving.
Cider Julep
- 500 ml fresh sweet cider
- 250 ml orange juice
- Fresh mint leaves
- 125 ml pineapple juice
- 30 ml lemon juice
Combine the cider and juices and stir well. Serve over ice and garnish with a mint leaf or two.
Cider Pound Cake
- 1 cup butter
- 4 eggs
- 3 cups all purpose flour
- 1/4 tsp. salt
- 1 cup sweet apple cider
- 1 1/2 cups firmly packed brown sugar
- 1 tsp. baking soda
- 3/4 tsp. nutmeg, cinnamon
Cream butter then add sugar. Add eggs one at a time, beating well after each addition. Stir together dry ingredients then add to butter mixture alternately with the cider. Pour batter into greased 9x5 loaf pan.
Bake at 350° for 1 hour, cool in pan for 10 minutes.
Apple & Cider Muffins
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/4 cup molasses
- 1 egg
- 3/4 cup sweat apple cider
- 2 apples peeled & choped
- 1 1/2 cups flour
- 3/4 cup natural bran
- 1 tbsp. baking powder
- 1 tbsp. baking soda
- 1/2 tsp. nutmeg, cinnamon
- 1 cup raisins
- 1/2 cup walnuts
Mix sugar, oil, molasses & egg. Stir in cider & apples.
In large bowl, stir flour, bran, baking powder, baking soda, spices. Blend in apple mix, just until moist, add raisins & nuts.
Spoon into greased & floured tins. Bake at 400° F for 20 minutes.
Yield - 1 1/2 dozen.
